Ingredients
- (1.5 lbs) Brookhaven Farms Grassfed Hamburger Patties
- (1tsp) Sea salt
- (1/2 tsp) Cracked black pepper
- (1/2 tsp) Garlic powder
- (1 tbsp) Worcestershire sauce (optional, for umami kick)
- (1 cup) Raw Pet Cow Milk
- (1.5 cups) Shredded sharp cheddar
- (1 tbsp) unsalted butter
- (1 tbsp) All-purpose flour
- (1/4 tsp) Smoked paprika
- Pinch of Salt
- (4) Brioche buns (toasted)
- (4 Slices) Brookhaven Farms Smoked Bacon
- (1 cup) Arugula or butter lettuce
- (1 large) Heirloom tomato, sliced
- Pickles or caramelized onions (optional)
Directions
Step 1: Shape the Patties
- In a large bowl, gently mix the 1.5 lbs of Brookhaven grass-fed ground beef with salt, pepper, garlic powder, and Worcestershire (if using). Don’t overwork it—keep that juicy texture.
- Form into 4 equal patties (about 6 oz each), pressing a slight dimple in the center to prevent puffing. Chill for 15 minutes while you prep the sauce.
Step 2: Make the A2/A2 Cheese Sauce
- In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute until bubbly (that’s your roux).
- Slowly pour in 1 cup of Brookhaven A2/A2 raw milk, whisking constantly to avoid lumps. Simmer 2-3 minutes until thickened.
- Stir in shredded cheddar, smoked paprika, and a pinch of salt. Keep warm on low, stirring occasionally—silky and rich from that grass-fed creaminess.
Step 3: Grill the Burgers
- Preheat a grill or cast-iron skillet to medium-high (400°F). Cook patties 3-4 minutes per side for medium (135°F internal)—grass-fed cooks faster, so don’t overdo it. Let rest 5 minutes to lock in juices.
Step 4: Assemble the Gourmet Burger
- Toast brioche buns lightly. Spread a generous spoonful of A2/A2 cheese sauce on the bottom bun.
- Stack your grass-fed patty, a slice of bacon, tomato, and a handful of arugula. Drizzle more cheese sauce over the top—let it ooze.
- Cap with the top bun. Serve with pickles or caramelized onions if you’re feeling extra.
Why It’s Gourmet
- Grass-Fed Flavor: Your Angus/Wagyu beef brings a rich, earthy taste—leaner yet juicier than grain-fed, thanks to Northeast TN pastures.
- A2/A2 Luxe: The raw milk cheese sauce adds a velvety, nutty depth—Jerseys and Brown Swiss shine here.
- Balanced Bite: Bacon’s crunch, arugula’s peppery kick, and brioche’s sweetness elevate it beyond basic burgers.
