A whole steer's worth of beef from our South Poll herd — a heritage breed bred for slow grass-finishing on Southern pastures, with deeper marbling and more concentrated flavor than commercial grass-fed cattle. Born on pasture, raised on pasture, finished on pasture. Never taken off grass. No grain finishing, no feedlot finishing, no exceptions — just our 188-acre Virginia farm, season to season, moved through fresh paddocks daily. Each share is tied to one specific animal from this year's herd.
What you get:
About 450 lbs of packaged meat from one whole steer. Steaks, roasts, ground beef, organ meats, bones for stock. Dry-aged 14 days. Custom-cut to your specifications.
Typical yield:
The cutsheet:
After your share is reserved, we work with you one-on-one to set your cutsheet — steak thickness, ground beef package size (1 lb or 2 lb), bone-in vs boneless preferences, organs and bones in or out, what to keep whole vs grind. The cutsheet is yours to design.

Logistics:
Pickup at the Johnson City farm location. A standard 7-cubic-foot chest freezer holds one share comfortably. Bring a cooler with ice for transport. We'll have everything labeled and organized at pickup.
Not a subscription. This is one large one-time purchase that fills a freezer with 6-10 months of meals from a single animal.
Limited to 10 shares this year. When these are claimed, our herd's share program closes for the season.
